Food safety is a major compliance and risk issue. Problems and scares can have devastating effects - as has been illustrated by many well-publicised events in recent years.

As a result, constant vigilance is a top priority for businesses throughout the global food supply chain. That means everyone from primary producers and growers to processors to restaurants and sales outlets – and also including those providing packaging, transport and other services.

There is increasing recognition of the need for effective management systems to ensure food safety, provide consumer confidence, and enable continued compliance with legislative and regulatory requirements.

HACCP (Hazard Analysis and Critical Control Point) is a methodology developed by the Codex Alimentarius Commission of the World Health Organisation, and is widely accepted as a suitable basis for controlling food safety. Many organisation supplement these HACCP principles with the discipline of an ISO 9001 management system. In fact, a number of certification bodies offer combined HACCP / Quality certification.

One of the problems facing the industry has been the plethora of different standards and requirements. Something that may change all that is the new ISO 22000 standard - released in late 2005. For the first time there is an international standard that harmonises various national standards. ISO 22000 incorporates three elements:

  • Requirements for good practice
  • Requirements for HACCP
  • Requirements for a management system

In order to comply with ISO 22000, organisations throughout the food chain will need to implement effective systems. Commercial considerations will require those systems to be efficient - which may involve integration with management systems aimed at other compliance issues such as health and safety or the environment.
